Chicken and Rice Soup With Thyme
Ingredients
- 1 large onion, diced
- 2 tablespoons butter
- 2 tablespoons olive or rice bran oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 stalks celery, diced
- 1 14 oz can diced tomatoes
- 1 14 oz can stewed tomatoes, cut up
- 2 15 oz cans Swansons Chicken Broth
- 1 1/2 teaspoons dried thyme leaves
- 1/2 cup brown rice
- 1 small roasted chicken, broken into bite-sized pieces
Instructions
Saute onion in the butter and oil for three minutes. Add bell peppers, celery, tomatoes, broth, thyme rice. Bring to a boil, cover and simmer 45 minutes or until rice is done. Add chicken.
