Mini Cheese Crescents
- 1 cup cottage cheese
- 1/2 cup butter, cold, cut into 10 pieces
- 1 cup flour
- 1/4 teaspoon salt
- freshly grated 24 month aged parmesan cheese
Place all ingredients except the parmesan cheese in the bowl of a food processor bowl. Process 30 seconds or until there are no more lumps of butter. Remove to a floured board, divide in half and form into two balls. Roll each out to an 1/8 inch thick, 10 inch circle. Cut like a pie into 8 triangles. Sprinkle each triangle with 1 1/2 teaspoons parmesan cheese and roll up beginning at the wide end, curling ends to shape into a crescent. Put on a cookie sheet and bake at 350 degrees for 25 minutes.
