Spicy Lentil Chili
Ingredients
- 1 onion, finely chopped
- 4 garlic cloves, finely chopped
- 3 tablespoons olive oil
- 5 teaspoons dried oregano
- 4 teaspoons cumin
- 1 lb chicken tenders
- 2 32oz boxes chicken broth
- 2 28 oz cans diced tomatoes
- 4 carrots, diced small
- 2 zucchini, diced small
- 1 large eggplant, diced small (you can use the equivalent of any type of eggplant)
- 1 jalapeno chili, seeded and diced small
- 1 1/2 cups brown lentils, rinsed and drained
- 1/2 cup brown rice, rinsed and drained
- 1 can garbanzo beans
- 1 bay leaf
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
Instructions
Rinse chicken tenders and pat dry, Remove tendons and cut in to small pieces and set aside. Saute onion and garlic in olive oil for 5 minutes. Add spices and stir 1 minute. Add chicken pieces and cook until pink is gone. Add all remaining ingredients. Bring to boil, turn heat to low, cover with loose lid and cook 1 and a half hours or until vegetables, lentils and rice are tender.
