Chicken Marinara Minestrone
Ingredients
- 1 cup onion, diced
- 2 garlic cloves, diced
- 1 tablespoon olive oil
- 5 1/2 cups homemade or 1 32 oz plus 1 14 oz Swanson’s Chicken Broth
- 1 14 oz can diced tomatoes
- 1 jar marinara sauce
- 1 1/2 cups green beans, diced
- 1 1/2 cups carrots, diced
- 1 cup celery, diced
- 2 tablespoon fresh parsley, minced
- 1 teaspoon basil
- 1 teaspoon oregano
- 3/4 cup 1″ vermicelli or spaghetti pieces
- 1 roasted chicken, cut into bite-sized pieces
Instructions
Saute onion and garlic in olive oil until onions are translucent. Add chicken broth, green beans, carrots, celery, basil and oregano, bring to boil and simmer for 20 minutes. Add marinara, bring to boil, turn down heat and simmer 45 minutes or until vegetables are tender. Cook pasta according to direction. Add cooked pasta and chicken pieces to soup. Cook 5 minutes. Serve with fresh parmesan reggiano cheese.
