Golden Beets and Greens

Montana Cafe in Santa Monica has something they do that is unique and fun. Their dishes have several small side vegetables. It’s like having a Thanksgiving dinner with all their dishes. Small squares of steamed beets in all colors make a plate of food beautiful. There’s no need for the sprig of parsley on their plates. While you’re busy making the main dish, doing steamed vegetables is so quick and easy. Also vegetables cooked this way are very healthy for you because they are more digestable. Swiss chard, green beans, cauliflower and broccoli — just steam and sprinkle with salt and a small amount of pepper and drizzle with part of your daily quota of healthy uncooked olive oil.

Cut beet tops off. Peel beets like an apple and cut into 1/2 inch squares. Wash beet leaves and remove mid rib leaving just the tender green pieces. Place beets in steamer basket and steam for 10 minutes. Add greens and steam another 5 minutes. Drizzle with olive oil and sprinkle with salt and a little pepper.
