Alex’s Salmon and Veggie Packets
Ingredients
- skinless salmon
- baby spinach and arugula
- small asparagus
- thin carrot sticks
- garlic slices
- orange, red and yellow sweet pepper strips
- thin red onion slices
- light olive oil
- salt and pepper
- fresh thyme
- lemon wedges
- cooked brown rice (recipe below)
Instructions
On a piece of foil lay salmon on a bed of baby spinach and arugula. Place asparagus and carrots sticks along the sides of the salmon. Place the garlic slices, sweet pepper strips and red onion slices on the salmon. Drizzle everything with the oil and sprinkle with salt and pepper and fresh thyme. Seal the foil packets. Set packets on a cookie sheet and bake in a 400 degree oven for 20 minutes. Fold the foil underneath along one side. Using a wide spatula, slide fish and vegetables off the foil onto a bed of rice. Serve with lemon wedges.
Easy Brown Rice
To cook rice, fill a saucepan with a tight fitting lid three quarters full with water and bring to a boil. Rinse the desired amount of rice with water using a sieve. Once the water is boiling, add the rice. Let the rice boil uncovered for 35 minutes, then remove from heat and drain all the water out. Put the lid on the saucepan and let stand for 5 to 10 minutes. Remove lid, sprinkle the rice with a half teaspoon of salt and fluff the rice with a fork.
