Roasted Sweet Potatoes and Pears
Ingredients
- 1 large sweet potato, cut in bite-sized pieces
- 2 ripe but firm bartlett pears, cut in bite-sized pieces
- 2 tablespoons lemon juice
- 1/3 cup butter
- 1/3 cup maple syrup
- 1 teaspoon cinnamon
- 1/8 teaspoon cloves
- pinch of salt
Instructions
Melt the butter and maple syrup with the seasonings. Place the pears in a large casserole, sprinkle with the lemon juice and mix to coat. Add the sweet potato and mix in the butter mixture. Spread the sweet potatoes and pears so they are in one layer. The casserole should be large enough so they aren’t overcrowded allowing for the juices to evaporate and the sauce to caramelize rather than steaming. Bake in a 400 degree oven for 40 minutes, stirring half way through.
