Roasted Sweet Potatoes and Pears

Melt the butter and maple syrup with the seasonings. Place the pears in a large casserole, sprinkle with the lemon juice and mix to coat. Add the sweet potato and mix in the butter mixture. Spread the sweet potatoes and pears so they are in one layer. The casserole should be large enough so they aren’t too crowded allowing for the juices to evaporate and the sauce to caramelize. Bake in a 400 degree oven for 40 minutes, stirring half way through.
