Autumn Kale, Carrot and Cabbage Salad

Ingredients

1 bunch kale, sliced thin
5 multicolored carrots grated or julienned
1/2 savoy cabbage, sliced thin
1/2 purple cabbage, sliced thin
1 package dried cherries
1 package dried cranberries
Trader Joe’s Pumpkin Spiced Pumpkin Seeds
microgreens

Instructions

Arrange salad ingredients on a plate, sprinkle with pumpkin seeds and micro greens, and toss with Light and Creamy Poppy Seed Dressing, to taste. Dressing will need to be doubled.
