Candied Orange Almond Salad
This was inspired by Trader Joes’ “Leafy Greens with Butternut Squash Salad Kit” that has a yummy flavor added to the almonds that wasn’t listed on the package. I was guessing it was orange. The kit has arugula, spinach, Lolla Rosa (red leaf lettuce, radicchio, light-green frisée, candied almonds, dried cranberries, feta cheese and cooked butternut squash.

Candied Orange Almond Salad
Ingredients
- baby spinach
- arugula
- butter lettuce, (or light-green frisée, radicchio, red leaf lettuce)
- sliced oranges (opt.)
- orange almonds (recipe below)
- dried cranberries
- orange dressing (recipe below)
Instructions
Arrange sliced oranges and greens on plates and sprinkle with almonds and cranberries and drizzle with dressing.

Candied Orange Almonds
Ingredients
- 1/4 cup maple syrup
- 2 cups sliced almonds
- 1/8 teaspoon salt
- 1 tablespoon grated orange rind
Instructions
Heat skillet and add maple syrup, salt and grated orange rind. When this all bubbles add the nuts. Stir constantly so the orange rind is distributed evenly. The nuts will start off sticky and then after 5 minutes the syrup will crystalize the the nuts will separate. Transfer to plates to cool.
Orange Vinaigrette
Ingredients
- 1/3 cup avocado or olive oil
- 1/3 cup white balsamic vinegar
- 1 – 2 tablespoons maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon grated orange rind
Instructions
Place all ingredients in a jar or salad dressing bottle and shake until combined.
