Mashed Cauliflower and Celery Root
- florets of 1 head of cauliflower
- 1 large celery root, peeled and cut into bite-sized pieces
- 1/4 cup butter
- 1 teaspoon salt
Steam the celery root until tender, around 9 to 11 minutes. Transfer the pieces to a food processor and add 2 tablespoons of butter and 1/2 teaspoon salt and process until it’s a smooth consistency. Steam the cauliflower until tender, around 8 to 10 minutes. Transfer to the food processor and add 2 tablespoons of butter and the remaining 1/2 teaspoon salt. Process until smooth. Mix the two vegetables together and transfer to a serving plate. Dot with butter and sprinkle with pepper.
