You can buy roasted chickpeas but homemade is so much better! Especially warm.

Roasted Chickpeas With Shawarma

Ingredients

Instructions

Line a large baking sheet with parchment paper. Place drained chickpeas in a colendar and let sit 15 minutes. Spread them on a double layer of paper towels and let dry 10 minutes. Replace the paper towels and let dry another 20 minutes. Place in a bowl and drizzle with the olive oil and sprinkle with salt.

Spread the chickpeas in the baking sheet. Bake in a 425° oven for 20 minutes, shake pan and bake another 10 minutes. Gather the chickpeas in the middle of the pan. Sprinkle with shawarma seasoning and toss to coat.

Serve warm for the most flavor and crunchiness.

Note: Ovens cook differently. I followed someone else’s recipe who bakes hers in a 400° oven for 25 minutes. When I tried that they came out chewy. You may have to try a few times to find out what works right for your oven but it’s worth it. They are delicious. They should shrink to about 1/3 their original size and they should be very golden in color and crispy all the way through. If they are chewy inside, and taste like chickpeas, they haven’t been cooked enough.
