Healthy Snacks: Valentine’s Day Veggies

Valentine’s Day Veggies
Ingredients
- red and white carrot sticks
- red sweet pepper sticks (cut the top and bottom off the red peppers and use them for the dip)
- radish roses
- cauliflower florets
- peeled and sliced watermelon radishes
- cherry tomatoes
Instructions
Assemble on a breadboard or large platter to look like a valentine.
Serve with Sweet Red Pepper Yoghurt Dip (below).

Sweet Red Pepper Yoghurt Dip
Ingredients
- about 1 1/4 cups yoghurt or labneh*
- 3 tablespoons minced sweet red pepper (and a little for the top garnish)
- 2 teaspoons chopped dill
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
Instructions
You can make labneh (thickened yoghurt) by placing a sieve lined with cheesecloth over a bowl, putting 2 cups yoghurt in it and leaving it in the fridge overnight. You want it to be the thickness of sour cream. If it gets too thick, just stir in some of the water that is caught by the bowl.
Mix all ingredients together and let sit in the fridge for 30 minutes.
