Turkey Vegetable Chili

Turkey Vegetable Chili
Ingredients
- 1 onion, diced
- 4 garlic cloves, finely minced
- 1 tablespoon avocado oil or light olive oil
- 2 teaspoon cumin
- 1 1/2 packages McCormick Mild Chili Seasoning Mix
- 1 pound ground turkey seasoned with 1/2 teaspoon salt, browned and drained
- 1 34 ounces chicken broth
- 1 each red, yellow, green pepper, diced
- 1 medium zucchini, diced
- 2 large russet potatoes, diced (opt.)
- 3 small carrots, diced
- 2 celery stalks, diced
- 1 7 ounce can chopped green chilies
- 1 can each garbanzo, black, and pinto beans
- 4 tablespoons double strength tomato paste in a tube
- 1/2 teaspoon salt or to taste
Instructions
Saute onions and garlic in the oil for 3 minutes. Add cumin and chili seasoning and stir for 1 minute. Add broth and stir until blended. Add remaining ingredients. Bring to boil, turn down, loosely cover and simmer for 2 1/2 hours or until vegetables are tender.
