Honey Glazed Apple Bran Muffins
Ingredients
- 2 1/3 cups whole wheat flour
- 1 teaspoon baking soda
- 1 /2 teaspoon salt
- 1/2 teaspoon cinnamon
- 3/4 teaspoon nutmeg
- 1/3 teaspoon allspice
- 1/2 cup oat bran
- 2 eggs, slightly beaten
- 1 1/8 cups frozen apple juice, thawed
- 2/3 cup buttermilk
- 1 teaspoon vanilla
- 2 small apples, chopped
- 1/3 cup honey, heated
- 1 cup walnuts, finely chopped, divided
Instructions
Place all the dry ingredients in a bowl and mix together with a fork or whisk. Add eggs, apple juice, buttermilk, vanilla and mix. Add apples and half of the walnuts. Bake at 375 degrees for 20 to 25 minutes.
Remove muffins to cookie rack. Put the remaining chopped walnuts on a plate. Dip the top of the hot muffins in the hot honey and sprinkle with the nut or you can roll them in the nuts. Set back on the cookie rack to finish cooling.
