Italian House Salad
Ingredients
- mixed greens
- mini tomatoes, cut in half
- green onions, sliced
- cucumbers, halved and sliced
- avocado, diced
- mushrooms, sliced
- radishes for garnish*
- Basic Italian Vinaigrette (below)
Instructions
Assemble the salad ingredients on a plate and drizzle with the vinaigrette.
Basic Italian Vinaigrette
Ingredients
- 3 tablespoons red wine vinegar
- 1/2 cup Bertolli Extra Virgin Olive Oil (light)
- 1/2 teaspoon salt
- 1/3 teaspoon black pepper
- 1 clove garlic, minced
Instructions
Put all the ingredients in a jar and shake until blended. Prepare the amount of salad ingredients to your taste and toss with dressing. *To make radish roses, wash and trim ends. Make thin slices down the sides, and a second set “petals” at the base. Do a criss cross at the top. Place in a bowl of ice water. If you make them ahead of time and put them in a bowl of water the refrigerator, the “flowers” will open wider.
