- Romaine lettuce*
- cucumbers, sliced
- cherry tomatoes or a tomato cut into pieces
- avocado, diced
- garbanzo beans, drained and rinsed
- feta cheese
- pine nuts, lightly toasted
- Greek olives (optional)
- basil leaves (optional)
Arrange on a plate and drizzle with dressing.
- 1/4 cup balsamic vinegar
- 1/3 cup light olive oil
- 1 garlic clove, minced
- 2 tablespoons parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Place all ingredients in a jar and shake.
*Purchase the Romaine lettuce whole and slice or break the leaves into pieces.
