I had never thought of asparagus as leafy greens until the other day when a doctor mentioned it as part of the list of especially good leafy greens along with broccoli, spinach and kale. These vegetables including sea vegetables are major part of the superfoods that our bodies need to fight against disease.
There is a simple way to check how you are doing with your eating choices. Buy some pH strips at the health food store and do the test first thing in the morning before you’ve eaten anything and see if your body has the good alkaline level range of 6.5 to 7. It’s been reported that cancer cells need an acidic environment in order to survive and multiply. Penne and Asparagus Salad
- 1/2 pound quinoa penne, cooked and cooled
- 1 pound asparagus, ends snapped off, cut in 1 inch pieces and poached until tender, cooled
- 1 red pepper, cut in slivers
- 10 mushrooms, washed, stems removed, sliced
- 1-2 avocados, diced
- 4 green onions, sliced
- grated gruyere cheese
- Herbamare seasoning
- light olive oil
Assemble salad ingredients on a plate, sprinkle with seasoning and drizzle with olive oil.
