Zucchini Zoodle Salad
Salad Ingredients
- 2 zucchini, cut into ‘noodles’ with a spiral vegetable cutter
- 15 multi colored grape tomatoes
- 1/4 cup basil, roll up leaves and slice thin
- 2 cups broccoli florets, steamed 5 minutes and cooled
- 1 cup red cabbage. sliced
- 1 can garbanzo beans, drained and rinsed
- 2 cups cooked brown rice pasta, chilled
- 1 avocado, diced or sliced
- 3 – 4 radishes, sliced
Dressing Ingredients
- 1/3 olive oil
- juice of one large lemon (about 2 1/2 tablespoons)
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 large garlic clove, minced
Instructions
Stir dressing ingredients in a bowl. Place salad ingredients in a large bowl or arrange on a large platter and drizzle with dressing. Gently toss salad.
