These can be made two ways. The second set of instructions is for a browned butter version.
Alex’s Favorite Green Beans With Slivered Almonds
- 1 1/2 pounds French green beans also called haricot verts (Trader Joes frozen French green beans/haricot verts are really nice.)
- 1/2 cup slivered almonds
- 1/4 cup butter, divided
- freshly ground pepper (opt)
Toast the almonds in a dry skillet until they just start to turn brown, then pour out on to a plate or paper towel and set aside.
Bring large pot of water to boil. Put the green beans in the pot and cook for 3 minutes or until tender. Drain.
Put 3 tablespoons of butter in the empty skillet and melt. Toss the green beans in the butter and sprinkle with salt and pepper. Transfer the green beans to a serving dish.
Add the remaining tablespoon of butter to the skillet and when it has melted, add the toasted almonds and mix to coat, then pour the butter and almond mixture over the green beans.
Add all the butter to a skillet along with the almond and good until the almonds brown and you have browned butter. Be careful not to burn it. Remove and set aside. Keep warm.
Boil the green beans until tender. Transfer to a serving dish. Sprinkle with a little salt and pepper. Distribute the browned butter and almond mixture over the green beans.
