Thanksgiving Veggies
Ingredients
- purple, orange and yellow carrot sticks
- slices of red and yellow sweet peppers
- cauliflower florets
- broccoli forets
- cucumber slices
- mushroom slices
- sugar snap peas
Other ideas: olives, grape tomatoes, sliced radishes, sliced zucchini, celery, lettuce
Instructions
Make the eyes with the small end of a white daikon radish. Cut the circles and using a kabob skewer or other tool, poke out a small hole for the eyes. Make the beak with the small end of an orange carrot, peeling it and cutting about a 1/2″ piece and slicing it at two angles. For the legs, slice an orange carrot lengthwise into 1/8″ slices and cut out. For the face, cut off the end of a red pepper.
Assemble on a breadboard or large platter to look like a turkey. Google turkey vegetable platters for ideas.
Serve with guacamole (Vitamix’s recipe is good)and/or your favorite yogurt or sour cream dip (See Herbed Sour Cream Dip).
